Abstract
Kitchen waste samples from expensive and cheap eats restaurants and from school canteens were analysed in the particular quarters of the year and their hydrolyzability, methane yield and anaerobic decomposability during anaerobic digestion were determined. The Czech kitchen waste was found to have a high starch content, to be easily hydrolyzable and its substrate production of methane, methane yield and anaerobic decomposability were found to be better than in the traditional substrate for Czech biogas stations, i.e. a mixture of cattle slurry, maize silage and grass haylage.

Byly analyzovány vzorky kuchyňských odpadů z drahých restaurací, levných lidových restaurací a školních jídelen v jednotlivých čtvrtletí roku a byla stanovena jejich hydrolyzovatelnost a výtěžnost metanu a anaerobní rozložitelnosti při anaerobní digesci. Bylo zjištěno, že české kuchyňské odpady jsou velmi škrobnaté, snadno hydrolyzovatelné a jejich substrátová produkce metanu, výtěžnost metanu a anaerobní rozložitelnost je lepší než u klasického substrátu českých bioplynových stanic tj. směsi kejdy, kukuřičné siláže a travní senáže
